Fabian Botta was born November 29, 1957 in Buenos Aires, Argentina. He
migrated to the United States with his Family in 1969. His formative years were
spent learning the baking trade along side his father in the family baking. At the
age of 14 living in the United States Fabian started to work in restaurants in
Atlanta, GA. For a while he flirted with food from every corner of the globe. He
tried his hand at Cajun cooking at Joe Dale's Cajun house, Russian food at
Nikolais Roof and classic french at Chateau Fleur de Lis. As a a young man,
Botta opened several restaurants on his own: The Tack Room, The Village Caffe,
The Louisiana Purchase, all in the mountains of North Carolina.
He then spent several years consulting from gourmet pizzerias to fine dining all
along the east coast.
After 25 years of business experience, Botta was ready to realize his deeply
personal fine-dining vision and opened Fabian's Restaurant in Winston-Salem
NC. His vision was complemented by being the first chef in the triad to be invited
to The James Beard House, NYC as a guest chef in 2003.
By June, 2008 William Kingery and Fabian Botta became partners and opened
The Ruddy Duck Tavern. Here at the Crystal Coast Fabian was able to bring all
his flavor profiles to the Morehead City Waterfront.
The Ruddy Duck Tavern is fun casual dining which offers every thing from
hamburgers and flounder to crispy duck and everything in between. Their meals
are cooked with the freshest ingredients with substantial portions at a great
value. At the Rudy Duck they try to support the local farmers as much as
possible. Another notorious feature are the homemade salad dressings, salsas,
